But why must the system go to such lengths to block our empathy? Why all the psychological acrobatics? The answer is simple: because we care about animals, and we don't want them to suffer. And because we eat them. Our values and behaviors are incongruent, and this incongruence causes us a certain degree of moral discomfort. In order to alleviate this discomfort, we have three choices: we can change our values to match our behaviors, we can change our behaviors to match our values, or we can change our of our behaviors so that they to match our values. It is around this third option that our schema of meat is shaped. As long as we neither value unnecessary animal suffering nor stop eating animals, our schema will distort our perceptions of animals and the meat we eat, so that we feel comfortable enough to consume them. And the system that constructs our schema of meat equips us with the means by which to do this.

Animals! The object of insatiable interest, examples of the riddle of life, created, as it were, to reveal the human being to man himself, displaying his richness and complexity in a thousand kaleidoscopic possibilities, each of them brought to some curious end, to some characteristic exuberance.
These Cro-Magnon people were identical to us: they had the same physique, the same brain, the same looks. And, unlike all previous hominids who roamed the earth, they could choke on food. That may seem a trifling point, but the slight evolutionary change that pushed man's larynx deeper into his throat, and thus made choking a possibility, also brought with it the possibility of sophisticated, well articulated speech. Other mammals have no contact between their air passages and oesophagi. They can breathe and swallow at the same time, and there is no possibility of food going down the wrong way. But with Homo sapiens food and drink must pass over the larynx on the way to the gullet and thus there is a constant risk that some will be inadvertently inhaled. In modern humans, the lowered larynx isn't in position from birth. It descends sometime between the ages of three and five months - curiously, the precise period when babies are likely to suffer from Sudden Infant Death Syndrome. At all events, the descended larynx explains why you can speak and your dog cannot.

What struck me whenever I visited a farm was how much more sophisticated was the life the animals were capable of living than was assumed by those exploiting them. The more we are willing to see about their lives, the more we see. Humans seem to take perverse pleasure in attributing stupidity to animals when it is almost always entirely a question of human ignorance.

Many animals experience pain, anxiety and suffering, physically and psychologically, when they are held in captivity or subjected to starvation, social isolation, physical restraint, or painful situations from which they cannot escape. Even if it is not the same experience of pain, anxiety, or suffering undergone by humans- or even other animals, including members of the same species- an individual's pain, suffering, and anxiety matter.

We are not encouraged, on a daily basis, to pay careful attention to the animals we eat. On the contrary, the meat, dairy, and egg industries all actively encourage us to give thought to our own immediate interest (taste, for example, or cheap food) but not to the real suffering involved. They do so by deliberately withholding information and by cynically presenting us with idealized images of happy animals in beautiful landscapes, scenes of bucolic happiness that do not correspond to anything in the real world. The animals involved suffer agony because of our ignorance. The least we owe them is to lessen that ignorance.
